I don’t know why I hadn’t taken advantage of this sooner?

I’ve been scouring the web today for healthy meal ideas.

It is another short week for us because we are camping with friends this weekend!  Anyone have any healthy camping food ideas?

Here’s The Plan:

Breakfast:

Oatmeal

Breakfast wraps using Trader Joes whole wheat tortilla

{ I found a whole wheat recipe today that I can’t wait to try later this week}

Breakfast sandwiches on homemade bread with grilled eggplant and peppers that Brad grilled up this weekend!

Anyone have a better whole wheat bread recipe??

Lunch:

Natural PB wraps

1.  Spaghetti, Salad with this dressing, whole wheat breadsticks {still looking for a recipe}

2.  Tostados {we didn’t get to make these last week} with quinoa and black beans

3.  Crock Pot Teriyaki Chicken over brown rice {not sure about the sodium in the soy sauce though}

Hey everybody!  We’re Baaaaack!

We just got back from a week long trip to Austin to visit my brother and sister-in-law.  I have tons of pictures to post once a get a few extra minutes.

I’ve decided to start posting our weekly meal plan to help me get organized and to have some accountability to our quest for healthier choices.  Plus, you will get to read about some of our favorite foods as well as all the new recipes that I will be trying out.

This week is pretty simple, because the kids will be at Cousin Camp for half of the week and I don’t plan on planning meals for just the two of us.

Monday:

Breakfast-Oatmeal and Go Lean Crunch Kashi Cereal (I love KathEats for great oatmeal ideas!)

Lunch-Turkey Sandwiches with cantaloupe and carrots

(I had a black bean burger crumbled over a side salad. Yum!) Morningstar Farm coupon

Dinner-Turkey Hot Dogs  and grilled corn

Tuesday:

Breakfast-Quaker Oatmeal Pancakes or Waffles (Now to look for a healthy syrup, is there such a thing?)

Lunch- Turkey or Ham sandwiches with fruits and veggies

Dinner-  Pizza for the kids and Tostados for the adults

Snacks- Yogurt with homemade granola & fruit

Homemade Granola from Becky Hammond

Heat in microwave:

1/2 c. honey

1/2 c. oil (we used Smart Balance)

1 t. vanilla

Pour over:

6 c. regular oats

1 c. raw sunflower seeds

1 c. wheat germ

1 c. nuts (we used sliced almonds)

1/2 c. coconut (we used unsweetened)

1 c. raisins

1/2 c. craisins, dried apricots, etc.

Bake for 1 hour at 300° stirring every 20 minutes.
